Intense aromas of olive leaves, green apples and fresh grass. Complex with a good bitterness and persistent pungency as great olive oils should be. Reminiscent of fresh green chillis like jalapeños in the retronasal. Excellent paired with most cuisines especially Spanish summer dishes like Salmorejo, Mexican cuisine and even as dressing over spicy, citrusy Thai salads. Organically farmed, pressed and packaged in their 90-hectare olive grove by the dedicated Escalera Álvarez family, a three-generational agricultural firm in La Roda de Andalućia, Seville. Their organic olive groves boast superb views of the distant Puntal Mountains and the River Yeguas. Thanks to their privileged location, rich soils and microclimate this region enjoys, some of the finest Hojiblanca olive oil come from this very spot. The family combines traditional, organic and biodynamic methods to nurture their trees while taking advantage of new technologies in their oil mill to craft their award-winning extra virgin olive oils.
